I did the install at:

Sep 04 23:20:49 Updated: dovecot - 1:1.1.3-0_80.fc8.i386

Doesn't doing the "yum update" do a "service dovecot restart" 
afterwards?  If not, that was my problem.

Yeup, that was my problem.  I just checked my /var/log/maillog, and 
apparently, after editing my dovecot.conf, I did a restart myself.

Strange, I don't remember running into this before.  Maybe I just have a 
bad memory....
