Read /etc/rpm/macros.kmdl, you need to use

--define '_kernel 2.6.foo-bar'

and *maybe* also

--define 'kmdl_kernelsrcdir /where/I/put/my/sources'

(you don't need it if /lib/modules/_kernel/build already points to the
right place.)
